Improving the human food system by reducing its reliance on animal products has clear benefits for the climate, environmental preservation generally, animal welfare, human longevity, reducing pandemic and antibiotic resistance risk, food security, and social justice. Philanthropists interested in any of these areas should be supporting our efforts, and/or investing in businesses that can be part of the solution.</image:title>

      <image:title>Alt-Protein Research - We are funding and helping spearhead an initiative to drastically lower the price of alt-proteins.</image:title>
      <image:caption>Normally, prices drop for a new category of products as innovations in production occur and as demand rises allowing economies of scale. The problem as it relates to alt-proteins is climate change is occurring much too quickly, and we must reduce global reliance on animal agriculture much more quickly than we are on track to do. So we are funding and supporting a creative initiative using “market shaping” to understand what steps along alt-protein supply chains could lower cost, and providing the risk reduction strategies that allow those component prices to drop in advance of market demand. By lowering the price of alt-proteins in this way, consumers can purchase products at a much lower price, which in turn will spur the demand that would not have been present at the higher price. This will accelerate all the benefits associated with a reduction in the number of animals in the human food system.</image:caption>

      <image:title>Alt-Protein Research - We are looking at how machine learning and artificial intelligence can make extrusion of plant-based meats more resource efficient and cost-effective.</image:title>
      <image:caption>Many plant-based meats on the global market today are made using a machine called an extruder, which mixes and cooks ingredients and causes the end product to have particular shapes and textures. Extruders are used in food production all the time (they are essentially a combination of mixers and ovens), but they were not specifically designed for the type of uses needed to create great plant-based meats.</image:caption>

      <image:caption>Plant-based meats are already significantly more healthy than the animal products they are meant to replace. But some meat eaters report that the flavor and texture are not quite where they need them to be in order for them to start using them on a daily basis. As an interim step while plant-based meats continue to improve in their sensory appeal, we are looking into the possibility of using some amount of an actual animal product to combine with plant-based ingredients to make a “mostly plant-based” meat product we call Plant-Rich Meat.</image:caption>

      <image:caption>There are many companies launching products from plant-based burgers, to plant-based chicken, to plant-based milk, to plant-based eggs etc. Products high in beef and other ruminant content tend to contribute the most to greenhouse gasses, largely through methane release which is many times more destructive than carbon. But setting aside for the moment environmental damage, and setting aside profit margins and other business considerations, if a founder is interested in animal welfare and preventing suffering, what would be the most important products to replace first (for example burgers, chicken nuggets, liquid eggs, etc.) from a perspective of how many animals would be saved? The answer is determined by the amount of consumption per year of a product, and how many animals are used per serving (for example, far more chickens are affected per ounce of chicken consumed than cows per ounce of beef). And perhaps an even more important question is how many days of suffering are represented by each serving of a food. For example, regardless of the animal size and how many servings a single animal represents, is that animal living each day in suffering prior to slaughter, or are they free from suffering until they are killed (for example wild-caught fish)? We posed this question and worked with Faunalytics to answer it for the United States based on USDA data, and here are the results of their research. The answer to the question of “lives saved” and “suffering prevented” will differ from society to society, as there are differences in the types of foods consumed and the ingredients used. We are now exploring answering this question for China and are funding a project to examine data available from mobile food ordering apps to help answer it.</image:caption>

As people move out of poverty and get more purchasing power (a good thing), people seek the products they associate with wealth - and animal products are high on the list. Given the size of populations in these countries, and the need to radically reduce and not increase animal product consumption, it's clear that much more action is needed to support people in those countries who wish to sole the problem. We are still looking into India, and for China, FSI is currently focussing on 5 areas: • Support and promote entrepreneurship in mainland China for plant-based companies and restaurants through supporting companies like Dao Foods. • Create a program to reach and educate Chinese students studying abroad in the United States. • Support videos and social media to educate people in China about the benefits of plant-based eating. • Foster Chinese-based academic research likely to be useful to Chinese decision-makers to help them understand the importance of animal product reduction for Chinese consumers, and to see how this is in alignment with their exiting goals and priorities. • Locate and foster more Chinese-based philanthropists.</image:caption>

But even when the plant-based products do meet consumer expectations, cost is still a factor. While some people may be willing to pay significantly more for a plant-based meat analogue (people who are vegan for example), the whole hypothesis behind offering plant-based alternatives is they are meant to influence behavior of people who are not strongly motivated to alter their diet. This means the products must have similar, or even a lower cost than the animal product they are meant to replace. In other words, cost matters. Through our Food System Research Fund, FSI has contracted with Intelligent Analytics and Modeling (IAMECON) to empirically investigate the cost structure of plant-based meat and develop an enhanced understanding of the way the industry is likely to evolve, as well as the potential barriers and innovations required in order to achieve cost parity (or near cost-parity) with animal-based meat. These insights can then be used in discussions about public policy relevant to alternative protein.</image:caption>

      <image:title>PB Foods Taste Test - Are existing plant-based chicken and burger products generally acceptable to meat-eaters and flexitarians or is more research needed to create more acceptable products?</image:title>
      <image:caption>The mass production and consumption of animal products raises many concerns for the environment, human health, and animal welfare. An important part of getting average people to reduce or eliminate consumption animal products is to provide them with analogues to those products that have the same taste, feel, and are priced similarly. This reduces friction in transitioning to a plant-based diet. Millions of dollars are being spent by advocates to both promote research into new plant-based meats, and to advocate for diet changes that rely on these products. There are products on the market today that purport to taste and feel like chicken and hamburgers, and we were interested to know to what extent existing products mimic chicken and beef burgers across a variety of measures. With financial support of Animal Advocacy Research Fund we engaged Precision Research to conduct a taste test of 4 chicken alternatives and 5 beef burger alternatives, including real chicken and real beef burger in the test to have as a baseline for comparison. The taste test was conducted in Chicago facility of Precision Research with subjects well distributed across demographic and ethnic groups. Here is a link to our first report. All products were purchased or requested from producers in the least altered form and products were selected with least possible seasoning. They were all cooked by a professional chef on skillets according to cooking instructions. Real chicken and burgers were purchased frozen and not seasoned and were simply one of the products included in what subjects tasted. Subjects tasted products “as is” without any condiments. The subjects were not given any detail about of the types of products they were tasting, and the order in which the products were offered was randomized across five seatings of subjects for each product type (chicken or burger). Tasting sessions were followed up by focus group discussions, three focus groups for each product type. Participants for the focus groups were selected if they gave enthusiastic responses about at least one plant-based product tasted. It is very important to note that these products were served bare (with no dressings or condiments of any kind) which is not how they would normally be consumed. We therefore expect that ratings of taste would be lower than if the products were offering in the manner they would normally be consumed (in a burger sandwich or in a chicken salad or burrito for example). So a product not receiving the highest rating it could get in the test does not mean the consumer would not like the product in a meal or wouldn’t consider purchasing it, as we learned in the focus groups. It is also important to keep in mind that subjects were given no information about the ingredients or any health benefits of products they were testing. Additionally they had no information about price. Ingredients, health benefits, and price all affect consumer behavior so again, these taste test results should not be taken as an indication of how consumers will react to these products in the marketplace. The taste test simply revealed how the plant-based products were rated by chicken and beef burger eaters in comparison to actual chicken and burgers. The results of the plant-based chicken taste test suggests that there were no plant-based chicken products in the test that, when tasted bare and without condiments, seemed analogous to chicken by chicken eaters. There were however products that once revealed as plant-based, sparked an interest in purchase to be used in dishes, provided the products did not seem to have too many ingredients or be overly processed. The results of the plant-based burger taste test suggest that there was just one plant-based burger product in the test that, when tasted bare and without condiments, seemed analogous to a beef burger by burger eaters. Like plant-based chicken, there were however products that once revealed as plant-based, sparked an interest in purchase to be used in dishes, provided the products did not seem to have too many ingredients or be overly processed. These findings are most significant for brands that are purchased in grocery, where the consumer might taste them outside of a prepared dish or with condiments. For brands that always reach consumers in a prepared dish (for example served prepared in restaurants or food service,) it may be less significant that the core plant-based product does not rate as well as the actual animal product. The almost complete absence of plant-based chicken and burgers that rate equivalent to the animal products they seek to replace suggests that more research is needed to create and bring to market at least one plant-based chicken that seems to chicken eaters to be analogous to real chicken. And even for beef burgers, it would probably be good to have more than one brand that burger eaters rate as analogous to a beef burger. This does not however mean that existing plant-based chicken and burgers do not have a potential consumer base among meat eaters. But it does suggest that these products should be marketed to be consumed in prepared dishes or with condiments. The focus groups revealed that consumers are aware of the health benefits of plant-based chicken and burgers, and they value those health benefits, while environmental or animal benefits are not part of their consideration. Participants indicated a willingness to purchase some of these products if they understood the ingredients, and if the pricing was acceptable. A major finding of the focus groups is that average chicken and burger eaters are not seeking out plant-based analogues, and so being offered free samples is a prime way to introduce them to these types of products. Based upon these findings, we recommend more research into plant-based chicken alternatives with a goal to create products that share the same basic properties as chicken, and more research into the potential ROI for plant-based meat companies and advocates to offer product sampling of plant-based meats. The Good Food Institute is conducting additional taste tests with the results soon to be publicized.</image:caption>

By understanding its various components and how they interact, we can intentionally work to change each component in the most effective manner available.  This can be accelerated by having more people and more organizations in more countries that are working on any of the components be better coordinated. These people and organizations need not all be working for this change for the same reason: a “big tent” approach that does not marginalize people by interests is most likely to bring about change more quickly. Raising the cost of production and lowering demand for animal-based foods will squeeze the profit margins, causing companies involved in animal agriculture to diversify and make their profits in other ways, and consumers of animal products to exhibit more demand elasticity and be more open to other forms of food to meet their needs. We recognize that these changes will affect numerous stakeholders in the current animal-based industrial human food system who are deriving what they perceive as value (in the form of profit, nutrition, taste, etc.), so wherever we can create better value for stakeholders by removing animal products from the system, we should do that to prevent or soften stakeholder opposition. In other words, we do not want consumers to experience a loss of desired nutrition and tastes, and we do not want to put the people involved in all aspects of the animal-based industrial human food system out of business.  Rather, we want people to get the nutrition and tastes they want in a way that does not harm the climate or animals, and we want related businesses and workers to maintain their livelihood by being in a business that does not harm the climate or animals.</image:title>

      <image:title>Political Action - Legislative efforts need more support</image:title>
      <image:caption>Advocates for changing the food system have for years placed a lot of effort into urging people to engage in individual diet changes. But what is often neglected is the tremendous power of government that influences at all levels what is available to eat and at what cost. Government actions could include: Voter initiatives in states that allow them Direct lobbying of elected officials at all levels to affect laws or policy that supports more research into animal product alternatives, or otherwise supports the alternative protein industry and stops favoring the animal industry Political organizing of supportive voters to pressure legislators Campaigning for and donating to the election campaigns of supportive politicians Legal challenges to combat bad legislation, establish new legal precedents, or force enforcement of existing regulations. Understanding that the food system is a market ultimately driven by the choices of consumers, governments hugely distort market forces in a number of ways. Governments give direct support to animal agriculture in the form of direct subsidies, free insurance, price guarantees, and a myriad of other actions, all of which artificially deflate the cost of animal products that reach consumers and prop up the industry to make it less responsive to true market forces. Governments also provide indirect subsidies, such as actions that hold down the cost of animal feed, and footing the bill for environmental cleanups or health care for people dealing with the effects of diet related illnesses. Governments (national and local) also influence what is taught in schools, and what food is provided to people in schools, and other government-run institutions such as prisons and the military. Governments also set nutritional guidelines that influence food choices and availability. Governments provide research funding that supports the needs of the animal agriculture industry, and do not provide commensurate funding into research that might lead to alternative proteins. The most fundamental issue is that animal agriculture interests are business interests and so by their very nature, generate money for political activities/lobbying through their trade organizations.  This translates into campaign donations and lobbyists who are able to get messages to political officials in a way casual donations from food system reform advocates just cannot match.  This may however start to change at least a bit as the plant-based foods industry grows in size, and trade groups like the Plant Based Foods Association (PBFA), the European Plant-based Foods Association (ENSA), and European Alliance for Plant Based Foods (EAPF) have more funding to hire more lobbyists to directly represent them. So what can regular people do? People should contact their representatives at all levels and let them know that reforming the food system is a priority. People should become members of advocacy groups and support those groups’ political efforts with phone calls, letters, and donations. The most foundational forms of political organizing are direct donations to political campaigns and grassroots organizing.  Ideally, legislators with the power to effect positive change should be supported and nurtured from the start of their political career, and not approached about these issues for the first time once in high office and potentially indebted to animal agriculture political donations. There is a new PAC, Food Solutions Action, which is working to change that. It is challenging, however, to get environmental, health or animal welfare advocates to both understand the value of political donations and organizing, and especially to engage in it.  Advocates tend to be very passionate, and like all of us, like to see immediate results.  It is very motivating to contribute money or time to rescue an individual abused animal, or a forest restoration project for example.  But contributing money to the campaign of a politician who may not be elected, and even if elected, may work for years before having an impact on a critical issue is many steps removed.  It is essentially a gamble of time and money.  And while many people are to some extent single-issue voters (think abortion or gun rights),  most people who support reforming the food system are not so narrowly focussed.  Additionally, political donations are not tax deductible, and this can discourage campaign contributions. But there is no question that activities to affect government policy are among the most important things someone can do to support the changes needed to create a sustainable and humane food system.</image:caption>

      <image:title>The Term Plant-Based - Insights into the term “plant-based”</image:title>
      <image:caption>Several years ago, FSI conducted a study in conjunction with Faunalytics to better understand the strengths and weaknesses of the term “plant-based” among different demographics in the US. This study is not definitive in any way. But the key takeaways are: • The term "plant-based" is overall neutral • But the term “plant based” did poorly with men, especially young men. Vegan also did not do well with that group. But this may be changing over time. • The average person (at least in our sample) actually preferred the label “vegan" over "plant-based" (and over most other options we gave) when looking at the same photos of foods. That was a bit of a surprise and may reflect a mainstreaming of the term “vegan”, and also that calling a food “vegan" is less charged than calling one’s self “a vegan". • Older adults liked "zero cholesterol". Here are the full results of that study. The term Plant-Based is generally seen as positive. In fact the Plant Based Food Association and Plant Based Foods Canada now promote a “Certified Plant Based” seal that brands can earn and pay for the right to place on their packaging. But the meat industry has taken aim at the term. They are citing “plant-based” meats, and claiming they have “long ingredient lists” and are high in sodium. But the truth is these products are not more processed than many other processed foods, and they are in most cases healthier than the meats they seek to replace. And even when it comes to sodium, when compared as part of an entire meal (for a burger, including a bun, condiments, etc.), they do not add much sodium at all. At the end of the day, many plant-based alternative foods are not necessarily trying to be “heath foods” per se, but are just healthier (and more environmentally friendly) than the animal foods they seek to replace. None the less, building on the fact that many people tend to see a “plant-based” as a positive (even if they are a flexitarian themselves), plant-based alternative companies should strive to make their products as healthful as possible to retain the luster the term plant-based currently enjoys.</image:caption>

They are lobbying at the state and federal level in the US and in other countries as well to prohibit the use of terms like “milk” and “meat” on plant-based foods. So Soymilk would be Soy beverage, and the term “plant-based meat” would not be legal to have on a package. Of course this comes up against well accepted uses of terms (think peanut butter, cream soda, etc.). In fact, in 2017, the EU, via a ruling by the European Court of Justice, restricted the use of milk and various terms to animal products. And half of US states now have considered bills that would limit the ways that plant-based meat analogues could label their products, most of them proposing that the packages could not say "meat" on them. Some have gone so far as to prohibit the use of terms understood to be "meat-related," such as "hamburger" or "patty" or "hot dog." Un the US, the Plant Based Foods Association has banded with Tofurkey, Uptons Naturals and the Good Food Institute to file various suits against these laws and regulations and are starting to see some victories. We note however that the EU labeling restrictions do not seem to have inhibited the stopped the growth of the plant-based industry there, but it may have slowed it. Companies are clever in how they can name products and how they package them to look like the products they are meant to replace, and consumers are not at all confused, in fact they want these new products. Terms like peanut butter and veggie burger are common the lexicon and create no confusion at all. Also, the publicity around these laws and the fights that surround them seem to only raise awareness of plant-based foods, and focus attention on the less attractive aspects of animal foods as lawmakers struggle to precisely define what “milk” and “meat” even is using terms such as “secretions” and “carcasses”. All indications are the fight has only just begun,</image:caption>

      <image:title>Stealth Vegan Restaurants - Stealth vegan "fast food" restaurants should be encouraged</image:title>
      <image:caption>Entrepreneurs inclined to be restauranteurs should be strongly encouraged and supported with investment and expertise to specifically launch fast food restaurants that do not overtly advertise themselves as such. We looked into the success of fast food restaurants that are vegan but don’t identify themselves as such (very few exist). We were particular interested to know: 1. Are they profitable? 2. Are they reaching non-vegans (perhaps by drawing in walk-in traffic) who otherwise would have eaten a non-vegan meal that day? 3. Are they having any lasting effect on non-vegans (making them more open to vegan meals, introducing to them vegan products such that they can then buy themselves in stores, etc.). Examples of stealth vegan restaurants in the US include Veggie Grill, and to a greater extend STAND-UP BURGERS (owned by Veggie Grill). There is also Amy’s Drive Thru (vegetarian and not vegan). We reviewed an internal survey from an existing restaurant and did some ad hoc interviews of patrons and have decided to not do more research ourselves. We are pretty convinced that this type of restaurant in the right location can be profitable, definitely can reach non-vegans who would otherwise have eaten a non-vegan meal, and can introduce non-vegans to plant-based products that then can then purchased in stores. The only thing we're not so sure of is the effect on longer term habits of non-vegans, i.e., if meat-eaters wander in for fast food and order a vegan meal, will some percentage of them then be more likely to consume more vegan meals over time as a result of this experience (either returning to the same restaurant or being generally more open to plant-based foods in other places). But we think there's enough data to say with some confidence that having more vegan fast food restaurants that do not in their outdoor signage identify themselves as being vegan would be a very good thing, and entrepreneurship in this area should be supported. We're not able to analyze whether a dollar spent on building a vegan fast food restaurant is ultimately more effective in helping animals than a dollar spent trying to influence existing restaurants to offer vegan options. Keep in mind staring a new restaurant is a very costly and risky venture. But then again, adding vegan options to existing menus in average restaurants doesn't mean non-vegans will eat them. But this is not an either/or. The Good Food Institue and other organizations work to get vegan options on existing menus. This work should be funded and accelerated to get more restaurants of all types to offer vegan options so long as smart testing is done as to what those options should be, how they should be named and described, and how they should be displayed on menus and advertised. And crucially, sales data needs to be gathered to indicate whether or not these vegan options are displacing other non-vegan options on the menu so a baseline can be established and experiments to increase positive effects can occur. But for those entrepreneurs out there who may already be inclined to be restauranteurs (and certainly many vegan restaurants are popping up), they should be strongly encouraged and supported with investment and expertise to specifically launch fast food restaurants that do not overtly advertise themselves as such, that are located in high traffic areas, and that can be scaled/franchised.</image:caption>

      <image:caption>You may have heard criticism of some of the newer plant-based meat products for having a “long ingredient list”, the implication being that these products are somehow unhealthy because they are over-processed and not “natural” like the meat, dairy and eggs they seek to replace. No doubt that less processing is generally good, but more or less ingredients does not mean something is more or less healthy. Shortbread, for example has just three ingredients - sugar, butter and flour. But you won’t see it listed as health food. It pays to look closely at who is most concerned about the ingredient list of plant-based meat analogues, and you may not be surprised that it is the meat industry behind the scenes trying to raise an alarm. Does the length of this ingredient list concern you? Corn, vegetable oil (corn, canola, and/or sunflower oil), maltodextrin (made from corn), salt, tomato powder, lactose, whey, skim milk, onion powder, sugar, garlic powder, monosodium glutamate, maltodextrin (made from corn), cheddar cheese (milk, cheese cultures, salt, enzymes), dextrose, malic acid, corn syrup solids, buttermilk, natural and artificial flavors, sodium acetate, artificial color (red 40, blue 1, yellow 5), spice, citric acid, disodium inosinate, and disodium guanylate. If so, don’t eat Doritos cool ranch chips. That list is longer (and contains much less healthy ingredients) than most plant-based meats. But to compare burgers to burgers, what does meat itself contain? Well it is not listed on any label because the animal is the “factory” that processes the plants. And that is the key thing to note. We know an animal is an inefficient (and environmentally damaging) factory for producing meat, but what is the meat actually made of? Before opening Keene Dental in 1994, he worked for free clinics and some of the finest practices in the District. He is part of the 123 Dental Association and stays up-to-date on the latest dental discoveries. Before opening Keene Dental in 1994, he worked for free clinics and some of the finest practices in the District. He is part of the 123 Dental Association and stays up-to-date on the latest dental discoveries. When not striving to keep his patients happy and healthy, he’s enjoys hiking with his family in Rock Creek Park.</image:caption>
